Shiitake Fried Rice
Serves 4 / 15 minutes
Farmers' Market Ingredients:
1 quart shiitake mushrooms, ripped into pieces if large or kept whole if small
1 onion, diced
1 tablespoon olive oil
2 tablespoons sesame oil
4 tablespoons soy sauce
1/2 tablespoon rice wine vinegar (or any vinegar you have on hand)
1 teaspoon ginger
1-1/2 cups frozen peas
5 cups leftover cold rice, separated
Heat skillet to medium heat and add 1 tablespoon olive oil.
Add onions and saute translucent, about 2 minutes.
Add shiitake mushrooms and saute until soft, about 3 minutes.
Turn heat down and push mushrooms and onions to the side, add 1 tablespoon sesame oil.
Crack eggs directly into pan and quickly scramble until soft and gooey - not too cooked.
Add rice and peas and stir everything together, turn heat up to medium high.
Add remaining sesame oil, soy sauce, vinegar, and ginger.
Stir constantly and cook for a couple of minutes until all the flavors meld together.
