Oyster Mushrooms with Scrambled Farm Fresh Eggs, Garlic, and Parsley

Serves 2  /  10 minutes

Farmers' Market Ingredients:

1 pint oyster mushrooms, ripped into pieces
4-6 eggs, beaten
1 tablespoon parsley, finely chopped
2 cloves garlic, minced

Pantry Ingredients:

1-2 tablespoons butter, or oil of choice
Salt and pepper, to taste


Heat skillet to medium high heat and melt 1 tablespoon butter.
Add ripped oyster mushrooms and saute until edges brown, about 3 minutes.
Turn heat down to medium low and add garlic, saute until fragrant.
Add 1 tablespoon butter or oil and beaten eggs to pan.
Cook, stirring frequently, until eggs are firm but still glistening.
Add parsley and stir.
Salt and Pepper to taste.
