Chicken and Mushroom Parmesan

 

Serves 2-4  /  45 minutes

 

Farmers' Market Ingredients:

1 pint shiitake mushrooms
1 pint oyster mushrooms
2 large chicken breasts

Pantry Ingredients:

2 tablespoons butter, or oil of choice
1 jar tomato sauce
1 cup mozzarella cheese
1 cup parmesan cheese
2 cups breadcrumbs
salt and pepper, to taste
cooked pasta of choice

 

Heat skillet to medium heat and melt 2 tablespoons butter or oil.

Add shiitake mushrooms and sauté on high heat until soft.

Add oyster mushrooms along with some salt and pepper and continue to sauté until all mushrooms are soft.

Layer in a roasting pan: chicken breast, cooked mushrooms, tomato sauce, mozzarella, and on top breadcrumbs and ½ cup of Parmesan.

Bake at 325 for 30 minutes.

Serve with pasta and remaining Parmesan.
